Kale Chips
So I just made my first attempt at kale chips… And they were SO GOOD that I ate them all and didn’t take any pictures. My bad. But they’re probably my new favorite snack, who knows, I might even make more tonight. Yeah, they were that good. So plenty of pictures to come. If you want to try them yourself though- 1) Rip kale leaves away from stem 2) Toss in a bowl with a little...

How to stock a Vegan pantry!
It’s a complete myth that being Vegan is expensive, it’s actually very affordable when you stick to fruits, vegetables and grains. Out of my four roommates, I can definitely say that I spend the least on groceries every week. The only thing that would run your grocery bill up is if you continuously indulge in processed meat substitutes. Click here for a great list of organic essentials...

Why can't my classmates be like my followers?
I have a film class on Thursdays from 5-8 where our professor let’s us eat dinner during class. So while my classmates are eating pizza from BHOP across the street, or burgers and fries, I’ll be eating some of my lentil soup I made earlier this week, with flax rice crackers, and a genius mix of Pom juice, lemon juice and water.

Mondays are no fun.
Know what makes them better? BAKING SWEET POTATO FRIES. And sharing them with my roommate, of course. Sharing makes everything better.

Sorry I haven’t been posting as much lately, first few weeks of classes are always hectic. And I’ve been so excited to be back in Boston that I’ve spent as much time outside my apartment as I can. But here’s a little bit about the last few weeks. 1) I’m so lucky to have a dining hall that supports Vegan lifestyles. One of our dining halls has a separate room full...

Good Morning Everyone!
It’s the first day of classes here at Northeastern, and I started out the morning by hitting the gym at six with one of my roommates. Had a banana before the gym, and after I had oatmeal with apples cinnamon, and a little bit of peanut butter. If you’ve never added peanut butter to your oatmeal I suggest you try it, you don’t even need a whole tablespoon to add a ton of flavor...

Whole Wheat Biscuits
To go along with the Rustic Pasta I made my roommates for dinner last night (click here for the recipe) I also made whole wheat biscuits from The Kind Diet. It’s really simple, I had one of my roommates knead the dough while I was sauteing vegetables for the pasta. Makes 10 Biscuits 2 cups whole wheat pastry flour 1 tablespoon baking powder 1/2 teaspoon fine sea salt 1/2 cup safflower oil...
