My mom’s potato salad has been a long time comfort food of mine. Until summer 2011, this throwback to my childhood has never been made vegan in my house. It was a simple substitution and omission of a couple ingredients, but this new vegan version of a family recipe is as good as ever.

Just a quick update for everyone, Irene destroyed everything around me. My house is without power (water, lights, AC- everything) and I’m only on the internet now cause Starbucks just got power back. I’m lucky though, because I know plenty of people who’s cars got smashed by fallen trees, and I’ve seen too many homes today that were completely destroyed by fallen trees. I am so blessed to only have lost my power.
That being said, I won’t be able to post much until I leave Richmond and move back school this weekend (Northeastern University in Boston, MA) but you can expect plenty then, I need to make up for lost time!
So stay healthy, try some new recipes for me, and stay lovely! Feel free to drop some questions/suggestions for me to come back to.
Aw you’re so sweet! Hurricane Irene actually knocked out my house’s power yesterday, so I’m camped out at a Starbucks for wifi. Other than that it’s been gorgeous outside today and I’m in a good mood. Stay lovely <3
Earth quake a few days ago, smoke lingering from the Virginia Beach wildfire and hurricane Irene headed our way. We’re not getting a break. I’m a little nervous to see how eating healthy/Vegan will go once our power is out (cause let’s face it there’s no way it’s staying on through a category 2 hurricane.) We’ve got our generator ready to keep the fridge up and running, but most of next week’s food will probably be of the pantry variety.
Oh and did I mention I’m supposed to move back to Boston next Friday/Saturday? Irene’s hitting both my homes pretty hard :(
