Coconut Carrot Cake
Happy birthday to my big brother! Carrot cake is his favorite, so here’s my recipe for it!
2C all purpose flour
1C raw sugar
1/2C brown sugar
1/2 t salt
2t baking powder
1/2t baking soda
2t cinnamon
3C shredded carrot
3/4C canola oil

1/2C vegan margarine, I used Earth Balance coconut spread
2C confectioners sugar
1t vanilla extract
1 1/2t lemon juice

Chickpea Quesadilla
1 whole wheat wrap, or soft taco shell
1/2 an avocado, sliced
1/4C red onion, sliced
4T chickpea cheese spread (red pepper hummus works too)

Quinoa Taco Salad
Mini taco salads for two! Easily adjustable.
4 corn tortillas
1/2C cooked quinoa
1/2C black beans
1 avocado
salsa
romaine lettuce
1) Bake corn tortillas on a muffin pan at 350 for 15 minutes until crisp to form the taco bowls- like this! 2) Tear lettuce and line the bottom of the taco bowls. 3) Add a spoonful of quinoa, then black beans, then salsa and avocado!
