Cha Yen Thai Oatmeal Cookies

I used one of my favorite black teas from Teavana, Cha Yen Thai, to spice these cookies. But you could use any spicy/chai tea you have.

1 C flour
1/2 t baking soda
1 1/2 C rolled oats
1/2 C Earth Balance (melted)
1 egg replacer (I used Ener-G)
1/2 C sugar
2 T agave syrup
1 t vanilla extract
1 T cinnamon
1/4 C STRONG chai tea
1/4 C flax seeds

You’ll need three bowls.
1) In one bowl, soak rolled oats in 1/4 cup STRONG chai tea.
2) In your second bowl, combine flour, baking soda, flax seeds and cinnamon.
3) In the third bowl cream together melted Earth Balance and sugar. Then stir in your egg replacer, agave, and vanilla.
4) Then mix it all together, roll into balls and bake at 350 for about ten minutes. You can grease your baking sheet, line it with foil, or use parchment paper like I did.
