Summer Lime Salad
(I don’t care if it’s not summer yet, this salad tastes like it!)
- 1 can black beans, rinsed
- 1 cup shelled edamame
- 1 1/2 cups corn
- Juice from one lime
- 1/2 cup packed cilantro
- 2T chia seeds
Mix it all together in a bowl and enjoy the deliciousness. Makes two large servings or three smaller. 26g protein, 19g fiber.
