Quinoa and Black Beans!

1 tsp. vegetable oil
1 onion, chopped
3 gloves garlic, peeled and chopped
3/4 cup uncooked quinoa
1/4 tsp. cayenne pepper
1 1/2 cups vegetable broth
1 tsp. ground cumin
1 cup frozen corn
2 cans black beans, rinsed

1) Heat oil in a saucepan and saute onions and garlic until golden brown
2) Mix quinoa in with vegetable broth, add cumin, cayenne and salt and pepper to taste. Allow mixture to come to a boil, reduce heat, cover and let simmer for 20 minutes.
3) Stir in frozen corn and allow it to simmer for 5 more minutes.
4) Mix in black beans, serve warm or chilled!

I made this earlier today because I have a film lecture from 5-8. and it’s a really easy dinner to eat during class. Super filling, super delicious, and easy to eat. You can have it plain, over a salad, or even use it as a taco filling. Be creative! :)
