Gluten Free Banana Bread

The mix of garbanzo flour and flax seeds make this a really high protein banana bread. And yummy too, of course.

  • 1C garbanzo flour
  • 1/2C brown rice flour
  • 2/3C ground flax seed
  • 2/3C brown sugar
  • 1/2t cinnamon
  • 1/2t allspice
  • 1/4t salt
  • 2t baking powder
  • 4T coconut oil
  • 2/3C almond milk
  • 2 egg replacers
  • 2 over ripe mashed bananas

1) Mix together flour, flax seed, spices and baking powder.
2) Beat together sugar and coconut oil, add egg replacers and almond milk.
3) Mix in the bananas, then pour into a loaf pan and bake at 350 for 45 minutes.

Apple Cider Cupcakes with Chai Icing!

You know you work at Teavana when… Well I flavored the cupcakes with apple lemon pomegranate rooibos tea, and used maharaja chai oolong for the icing. Crushed german rock sugar for sprinkles. They may be messy, but are damn delicious if I do say so myself.

Very Berry Banana Bread
Vegan & Gluten Free

3 Over ripe bananas, mashed
2 T Lemon juice
1 Individual serving of apple sauce
1/2 Cup agave nectar
2 Cups gluten free flour
3/4 t Baking soda
3/4 t Baking powder
1/2 t Salt
1 T Nutmeg
1 T Cinnamon 
1/4 Cup brown sugar
1/2 Cup blueberries
1/2 Cup cranberries 

1) Combine mashed bananas, apple sauce, and agave nectar.
2) In a separate bowl, combine flour, baking soda, baking powder, nutmeg, cinnamon and salt.
3) Combine wet and dry mixtures, and stir in brown sugar.
4) Fold in your berries and pour into a greased baking pan.
5) Bake at 350 for 50-60 minutes and enjoy!

This recipe is non fat, and each serving (1/12 of loaf) has 4 grams of fiber and 3 grams of protein.

Apple Spice Cupcakes

2 small apples, or 1 large
1 T brown sugar
1 T earth balance vegan butter
1 cup almond milk
1/3 cup canola oil
1 t lemon juice
1 t vanilla
1 1/2 cups flour
1 1/2 t baking soda
1/2 t baking powder
1/4 t salt
1/4 t nutmeg or pumpkin pie spice

1) Preheat oven to 350, core and chop apples
2) Heat earth balance and brown sugar in a pan, stir in apples for about 12 minutes until almost all the liquid has evaporated
3) Whisk together milk, lemon juice, canola oil, sugar and vanilla. Then add in your flour, baking powder, baking soda, salt, and pumpkin pie spice
4) Fold in the cooked apples
5) Bake for 20-22 minutes and enjoy!

Kale Chips

So I just made my first attempt at kale chips… And they were SO GOOD that I ate them all and didn’t take any pictures. My bad. But they’re probably my new favorite snack, who knows, I might even make more tonight. Yeah, they were that good. So plenty of pictures to come. If you want to try them yourself though-

1) Rip kale leaves away from stem
2) Toss in a bowl with a little olive oil, salt and pepper
3) Lay them out on a baking sheet
4) Bake at 350 for 10 minutes 

Simple, healthy and delicious. My three favorite things. Oh, and inexpensive.

Tortilla chips!

They are tasty and come in any flavour you want.

Here’s what you need:

-Pack of soft shell whole grain tortilla wraps

- Canola/vegetable/olive oil (whatever you have is fine)

- A variety of spices. The combinations we used were 

a) Crushed chili, paprika and a bit of seasoning salt

b) Garlic and onion powder

c) Straight seasoning salt

d) Cinnamon and brown sugar

1) Preheat oven to 400

2) Spread one teaspoon of your cooking oil all over the tortilla

3) add your spices. If your powdery spices clump up or come out funny, use a spoon to scrape and spread evenly over tortilla

4) Cut tortilla up into eighths

5) Bake for ten minutes. Stay by your oven and check them every 2-3 minutes, or else they will burn.

6) Place onto plate and allow to cool.

7) Feast. These can also be enjoyed with hummus, and are a good alternative to potato chips.

Kris and I liked the cinnamon sugar ones the best, they tasted like Autumn.Try them and tell us how you seasoned your chips!
