Snickerdoodle Truffles

Makes 12 Truffles

  • 10 pitted dates
  • 1C almonds
  • 1T peanut butter
  • 1T agave or maple syrup
  • 1/4C sugar
  • 1T cinnamon

1) Heat the dates up in a warm skillet, shaking the pan constantly to make sure they don’t burn. We’re not cooking them, just getting them warm.
2) Moving the warmed dates into a bowl and mash with a fork (or your hands!)
3) Grind the almonds in a food processor or blender, and combine with the dates.
4) Add the agave and peanut butter, continuing mixing with your hands or fork.
5) Roll the mixture into 12 individual balls, and then roll the balls in the sugar/cinnamon mixture in a bowl or on a plate.
6) Let refrigerate for one hour so the truffles can firm up, and enjoy!

**if you’d like to keep this recipe raw, instead of heating the dates, blend in a food processor. It’s just a bit messier**

Chocolate, Banana & Peanut Butter Pancakes!

Listening to Jack Johnson this morning inspired me to make banana pancakes. This recipe makes 7 large pancakes, you can always double it if you’re making them for more people. I had two myself, and froze the rest to later!

1 Mashed banana
1 Cup whole wheat flour
2 Tablespoons baking soda
1 1/4 Cups chocolate almond milk
1 Tablespoon agave syrup 
4 Tablespoons peanut butter

Combine everything in the bowl until the lumps are gone, and cook to your heart’s desire! These pancakes are so easy to make, and come out super fluffy. And you don’t have to feel but so guilty eating them, because the whole wheat flour, banana and peanut butter combine for a lot of fiber and protein.

Friday Night Chocolate Chip & Peanut Butter Cookies!

I think midnight is the perfect time to bake vegan cookies with my roommate, and oh my lord are they delicious.

2 cups whole wheat flour
2 teaspoons baking powder
1/2 teaspoon salt
cinnamon, to taste
dark chocolate chips, to taste
1 cup sugar
1/2 cup canola oil
1 teaspoon vanilla
1/4 cup water
1 individual serving cup apple sauce
as much peanut butter as your heart desires

1) Combine the dry ingredients.
2) Pour in the wet ingredients, mix well.
3) Bake for 11-12 minutes at 350.
4) ENJOY!

Peanut butter cup soft serve

  • 1 c. frozen banana chunks
  • 4-5 tbsp almond milk
  • 1 tbsp Justin’s peanut butter
  • 2 tsp Enjoy life chocolate chips
  • 1 Justin’s dark chocolate peanut butter cup

In a high powered blender, blend the banana chunks, almond milk and peanut butter on high speed for 20-30 seconds, or until smooth. Add chocolate chips and crumble in peanut butter cup; blend for 5-10 seconds. Eat immideately.
