Combine everything in a saucepan on medium heat, and stir CONSTANTLY until the water has evaporated. Remove from heat and let almonds cool on wax paper or a paper towel. Enjoy!
Note: it’s really easy to eat the whole batch.

1) Steam cauliflower until mashable. You can’t over steam it, so when in doubt just let it sit.
2) Blend either in a food processor or blender, or mash by hand. Either way works fine.
3) Pour in olive oil, chives, salt and pepper. Whip with a fork.

Normal people make a last minute sandwich to take to work. I make dijon quinoa with steamed broccoli and crushed almonds. But seriously this is the best dressing ever, just combine soy sauce/tamari and dijon mustard to flavor your rice or quinoa! Low calorie, low fat, and TONS of flavor. Oh and did I mention this bowl packs in 26g of protein?
I finally watched Forks Over Knives last weekend on instant netflix. I loved it. Did anyone else notice they didn’t really refer to the lifestyle as ‘vegan’ but instead ‘whole foods, plant based’ the whole time? I think a lot of people are scared or intimidated by ‘veganism.’ But this documentary laid out the facts without any bullshit and I really, really enjoyed it. If you haven’t seen it, I highly recommend it.
As of yesterday, I’ve officially lost 25 pounds since August and am three pounds away from my goal weight. I can’t believe it. Going completely plant based was the best decision I ever made.
