I picked these guys up at DeLucca’s Market on Newbury Street today, I just can’t resist quaint grocery stores. Plus, whenever I wander into a store and see unique vegan items, I feel obligated to buy them. It doesn’t matter if I’m not hungry, or particularly broke that week, I just want the store to keep stocking vegan food! Does every vegan feel this way, or is it just me?

My New Favorite Snack

These Snapea Crisps (by Snack Salad) only have 130 calories per serving, and also have 3 grams of fiber and 4 grams of protein! Personally I think they taste better than potato chips, and I NEVER thought I’d ever be able to say that about anything. They sell these 3.3oz bags in my university’s student center for 2$, but I’m just going to buy them in bulk off Amazon- they’re THAT good.

Taco Spice Chickpeas

15 oz can chickpeas, drained and rinsed
1 tbsp low sodium soy sauce
1 tsp lime or lemon juice
1 tbsp chili powder
1 1/2 tsp ground cumin
1 tsp black pepper
1/4 tsp onion powder
1/4 tsp garlic powder
1/8 tsp cayenne pepper  
1/4 tsp dried oregano

1) Rinse chickpeas under cold water, don’t dry completely.
2) Mix in a bowl with the remaining ingredients.
3) Pour onto a greased or lined baking sheet and bake at 400 for 20-40 minutes depending on how crispy you want them!

You can munch on these by themselves, put them in tacos, or make a taco salad! I opted for the taco salad, but really sky’s the limit.

Kale Chips

So I just made my first attempt at kale chips… And they were SO GOOD that I ate them all and didn’t take any pictures. My bad. But they’re probably my new favorite snack, who knows, I might even make more tonight. Yeah, they were that good. So plenty of pictures to come. If you want to try them yourself though-

1) Rip kale leaves away from stem
2) Toss in a bowl with a little olive oil, salt and pepper
3) Lay them out on a baking sheet
4) Bake at 350 for 10 minutes 

Simple, healthy and delicious. My three favorite things. Oh, and inexpensive.
